Papillon Hot Sauce was established in 2018 by James Higdog Higginson after a lifelong obsession with heat. Heavily influenced by West Indian style hot sauces and the bounty of Scotch Bonnets and Habaneros in the markets of South East London growing up, he wanted to create a condiment that wasn't available in the supermarket. After a brief spell under the name Higdog's Homewrecker Hot Sauce, experimenting with over 30 difference chillies and damn hot recipes, a compromise was sought...Homewrecker became Papillon by cranking up the flavour and dialling down the heat to create something balanced, but still packing a punch.
